This commitment extends to furnishings as well: sunbed mattresses are now crafted by Mousses Étoiles, a dedicated French company known for comfort and sustainability. In the rooms, bedding, linens and many other elements are all made in France, favoring local production and responsible brands.

Chef Philippe Colinet, head of the Michelin-starred restaurant Colette, embodies these values in the kitchen. Nothing goes to waste: peelings become broth, fish bones are turned into stock, and herbs, edible flowers, and citrus fruits are grown on-site. The chef champions local producers such as vegetable grower Yves Ménard and the oyster farmers of La Seyne-sur-Mer, always favoring seasonal ingredients and short supply chains.
