Philippe Colinet: simplicity and honesty
Strangely enough, the conclusion to the review by Email Gourmand seems to be the best introduction. This blog that specialises in information about the cuisine of the South of France ends its review with: “Simplicity and honesty on the plate; a culinary signature which promises to be totally in keeping with the DNA of the Hotel Sezz Saint-Tropez and its restaurant, Colette”. Indeed, just as the Sezz Saint-Tropez ethos is about providing a place of comfort and tranquillity in perfect harmony with its environment, our chef Philippe Colinet is inspired by locally sourced produce, sublimating its flavours in a cuisine that is both simple and extremely sophisticated in its combinations of flavours and textures.

The Michelin Guide tweets on the ambitious cuisine for which Philippe attained his star a few years ago, and the gastronomic critic Gilles Pudlowski, in his blog, points out that our chef has resided in Saint-Tropez for six years already. Six years that he has used to forge links with local producers such as Rémy, a fisherman in Cavalaire, and Yann, a market gardener in Cogolin. Yann's tomatoes and fennel complement Rémy's red mullet, rock fish and squid divinely under the magic wand (or spatula) of Philippe Colinet. Throughout the season, “he faithfully interprets the local produce sourced from his contacts”, according to Gilles Pudlowski.
Philippe Colinet’s success comes as no surprise to the specialists who’ve followed his career for a while, but such wildly favourable feedback surely validates his approach and the quality of the results. This feedback, of course, delights the team here at the Hotel Sezz Saint-Tropez and we look forward to receiving yours!
