Finally, we have some good news! In these difficult times, it’s with great happiness and pride that we learned that the famous Michelin Guide, a highly respected reference work in the field of gastronomy, has awarded a star to our chef Philippe Colinet and our restaurant Colette here at the Hotel Sezz Saint-Tropez. A great personal and collective triumph.
Recognition of an approach
Having arrived in spring 2020, and despite a difficult situation and a season shortened by several weeks, our chef Philippe Colinet has been able to breathe his heart, soul and savoir-faire into the cuisine offered by the Colette. Forging partnerships, in which friendship has been a key component, with various local producers who share his values, Philippe has been able to offer a very personal gastronomic creativity that brings out the fine flavours of the Mediterranean in all their delicious glory. Simple, in the noble sense of the term, and uncluttered, his aesthetic compositions blend beautifully with the design decor of the Hotel Sezz Saint-Tropez.
The pride of a team
Although its spirit and inspiration are that of one man, this success is a true collective achievement. Everyone, from the kitchens to the dining room, from the pâtisserie to the waiting staff, has played their part in obtaining this star and can congratulate themselves on attaining this mark of quality. It rewards everyone's commitment as well as the choices and values that we share on a daily basis. In our opinion, limiting our ecological impact, our desire to forge meaningful partnerships, and our vision of hospitality and luxury also contributed to this great success.
Now, to fully savour this triumph, we must share it with you. We hope to see you following our reopening on April 23rd. Until then, perhaps Chef Colinet will give us some hints about the upcoming Colette menu ...
