Meet our Michelin-starred chef, Philippe Colinet

For two seasons, the Hotel Sezz and its restaurant Colette have been inseparable from the name of Philippe Colinet. The chef, who joined us in 2020, succeeded in winning a Michelin star in his first season. Read on as we tell you more about his background and culinary identity.

 

The Colette and chef Colinet: the perfect match

When miracles are conjured on plates, it’s the result of an alchemy and a bond between a team, personalities and a place. Our chef Philippe Colinet tells us that he felt completely at home from his first visit to the Hotel Sezz. Indeed, the contemporary and refined aesthetic of the establishment corresponded in every way to the finesse and precision of his concept of cuisine. Likewise, his respect for savoir-faire, tradition and the environment matched the values ​​that director Angélique De Sà-Mansoutre and owner Shahé Kalaidjian are keen to highlight.

 

A passion for the finest ingredients

That’s why, right from his arrival, Philippe Colinet was able to express all his experience and expertise. Wanting to work only with seasonal produce and ingredients that are sourced as locally as possible, he set out to meet the best producers and artisans in the region. Market gardeners, fishermen, olive growers, cheese makers, oyster farmers and more share with him their history, traditions and knowledge and provide him with authentic and delicious foodstuffs. Disdaining affectation and excess, he seeks to sublimate the quintessence of the ingredients in each dish. What’s more, whether crafting his creations or receiving awards, he never forgets to pay tribute to the role played by his team.
