A strong element of Mediterranean gastronomy

Surrounded by olive and palm trees and overlooking the sparkling swimming pool of the Hotel Sezz, our restaurant offers a unique setting and a joyous yet intimate ambiance. Chef Colinet highlights his authentic and refined cuisine using one of his favourite assets: lemon. This Mediterranean gold adds its touch of freshness and acidity, perfect for contrasting with the generosity of olive oil or the savoury seafood richness of shellfish.

 

The lemons of the Colette

When you taste the culinary creations of Chef Philippe Colinet, you will savour all the subtlety of our citrus fruits, but you can also admire their beauty. Citrus trees grow abundantly in the Mediterranean garden of the Hotel Sezz and on the restaurant terrace, offering their delicate scents and the glory of their shining foliage. What’s more, our citrus fruits are grown organically, without the use of pesticides. This spring, discover on our menu the subtlety of our lemons complementing asparagus or smoked salmon as a starter. You will also find it in our octopus carpaccio, our amazing organic chicken egg with caviar and the creative Café dessert.

 

Mediterranean cuisine offers a palette of flavours of rare richness that Chef Colinet loves to use. Lemon is one of his favourite ingredients because it offers him endless possibilities, both savoury and sweet. And when it has been picked on the terrace the same morning, it’s even better!
